Guilt Free Onion Rings!

YUMMMMMMMMMMMMM!

I love onion rings! I was craving some last night and came across some recipes online and decided to improvise since I didn't feel like making almond flour/meal and CJ just bought tapioca flour. Tastes amazing on its own with a sprinkle of sea salt.

Ingredients:

1 large yellow onion, chopped into rings
1 egg, cracked and whisked
1/2 cup of coconut flakes or flour
1/3 cup of tapioca flour
1 tsp of each:
     chili powder, paprika, & chili flakes
Coconut oil for frying

You will need two small bowls and a tray. In one bowl mix all dry ingredients together & other bowl whisk egg. Dip onion ring into egg mix and then into flour mixture. Put on tray. Repeat until all onion rings are coated! Melt coconut oil in a small frying pan until you have about an inch of hot oil.  Then start frying! I didn't want to use so much oil so instead of them being submerged I just flipped them over once one side was golden brown. I suggest coconut oil because it is stable in high heat unlike olive oil. Fry until golden brown and cool on paper towels. Sprinkle some sea salt and tada! DONE! It is sort of time consuming if you are doing it by yourself so I suggest getting a partner. Just make sure they aren't eating them all! Te he ;). ENJOY!!!!!

Dad's Recipe for Awesome Guacamole!



I've been watching my dad for years make us an awesome Mexican feast. His best dish  is his guacamole! Here is his recipe to the best of my knowledge. Came out great!

Ingredients:
4 ripe avocados, pitted & mashed
1/2 of a red onion, minced
1 lime, juice only
1/2 of a jalapeƱo, minced (no seeds! unless you want your mouth on fire :(  )
1/2 cup of lettuce, minced(secret weapon for awesome crunch!)
1 tomato,chopped
Handful of cilantro, minced
a bit of salt, pepper & garlic powder to taste

Just throw everything into a medium sized bowl, mix & enjoy! I LOVE the lettuce in the guac! Its a nice surprise. My dad worked at a Mexican restaurant and he said they used lettuce for a filler to make more for their buck. Awesome idea! You can add more or less of whatever to make your own special taste.

Fresh Zucchini Noodle Cold Salad



Nice alternative to pasta noodles! Came up with this this morning :). Tastes pretty good. Serves about 4.

Ingredients:

1 zucchini
1/2 a bell pepper, diced
A handful of cilantro, diced fine
2 celery stalks, diced
1 tomato, diced
1 green onion, chopped fine
1 1/2 tablespoon of mayo
A squirt of dijon mustard
coconut oil for sauteing
salt & pepper to taste

Peel the zucchini with a vegetable peeler to make the "noodles". Saute the zucchini noodles with a little coconut oil until tender. Add salt and pepper. Put in fridge to cool. Dice up rest of veggies and cilantro and put into a medium sized bowl. Mix well and add "noodles" once they are cool. Add mayo and just a tad of dijon mustard because it can be over baring. I accidentally put to much and had to double my mayo so watch out! Salt and pepper to taste!

Tuna fish salad boats!

YUMMMM!

Since I finally mastered making my own homemade mayo I decided to make a tuna fish salad! Was so excited making this lol.

Ingredients:

1/2 cup of mayo or however much you like
4 (5oz) cans of tuna 
1/2 of a green bell pepper
1/2 of a red onion
3 or 4 celery stalks
a couple teaspoons of Dijon mustard
salt and pepper to taste
Whatever else you like in it!

For the boats:
Spinach leaves

Drain tuna and scoop in medium sized bowl. Add all dry ingredients then add mayo, mustard & spices and mix! Refrigerate if you like it cold like me for about 10 mins or throw into the freezer for 5 lol. 

Scoop a serving on a plate with a side of spinach leaves. Spoon a bit of tuna on a spinach leaf to make a tuna fish salad boat! 

The Secret to Awesome Mayo!

I've always struggled with getting the consistency of mayonnaise! Its never turns out right...just sad and watery oily gunk. Anywho my monther-in-law Shelley shared her secret with me and her simple recipe she got from someplace lol.

Ingredients:
1 egg
1/2 a lemon, juice only
1 teaspoon of Dijon mustard
Couple dashes of paprika
1 cup of olive oil
salt to taste

Crack egg into blender and add lemon juice & Dijion mustard. Pour olive oil into a cup. Start blender or food processor and add a teaspoon of olive oil slowly. Let it mix for a couple minutes and repeat until half of the olive oil is gone. This will probably take 10 to fifteen minutes or so, but is soooo worth it! You can throw a couple teaspoons at a time once you are almost to a half a cup. Once half of the olive oil is infused slowly pour in the remaining olive oil where as the "stream" of olive oil is as thin as a pencil tip. This should take about a minute or so. Then you are done! Add paprika and salt and put mayo into a air tight container and let it sit in the fridge to chill.ENJOY!

*I would recommend using up the mayo in a week because you are dealing with a raw egg. *
