Banana Chocolate Chip Mini Muffins

I love love this recipe! My sister bought me mini muffin pans for Christmas and I decided to play around with some recipes and made this! All my coworkers loved them!

2 medium size bananas, mashed
2 eggs, whisked
¾ cup almond flour
¼ cup honey or coconut sugar
¼ cup coconut oil, melted
¼ cup tapioca flour
2 tbsp coconut flour
1 tsp vanilla extract
2 tsp cinnamon
½ tsp baking soda
½ tsp baking powder
Pinch of salt
Coconut oil (for greasing pan)
1/3 cup Enjoy Life Chocolate Chips (paleo approved) or regular mini semi-sweet chocolate chips.

Set your oven to 350 °.
Place all ingredients in a food processor besides the chocolate chips. Then add the chocolate chips and pulse a couple times. Put one tablespoon of batter in a greased mini muffin pan and bake for around 10 mins. Makes about 33 muffins. Enjoy! I adapted this recipe from South Beach Primals Chocolate Banana Bread, but made it my own!

Banana&Almond Butter Ice Cream (Paleo/Vegan)



I was trying to figure out how to make coconut ice cream with out eggs and was searching and searching the web and I couldn't find a recipe that was paleo friendly and wasn't to complicated. Partly because I didn't want to have to boil the mix and wait two hours before I could stick the mixture in the ice cream maker lol. My husband wanted to mix coconut ice cream with banana ice cream and see how that tasted so I just thought making coconut ice cream with bananas will still make a creamy texture without eggs! So here you go. It is AMAZINGLY GOOOOOOD! Sweet & salty goodness.

Ingredients:
3 frozen bananas, peeled and diced
12 oz of canned coconut milk
1 teaspoon of vanilla extract
1 teaspoon of maple syrup
1 to 2 tablespoons of salted almond butter

Add all ingredients except the almond butter to food processor. Mix well. Transfer to a ice cream maker and add almond butter five minutes before ice cream is finished. Tada! It is such a great combination of sweet from the bananas and salty from the almond butter. Makes a little over a pint. Enjoy.
