Red Pepper & Mushroom Pork Sausage Meatballs with roasted Green beans

These are so good and easy to make! Just making them into balls takes up most of the time, but I was jamming out with some music so I didn't mind :)

Ingredients:

2lbs pork sausage
Small to medium red bell pepper, minced
Handful or two or mushrooms, minced
2 eggs, whisked

Seasonings:
2 tsp garlic powder
2 tsp Italian seasoning
1 1/2 tsp of sea salt
(I put 2 tsp originally, but found it a tad salty)
1 1/2 tsp of pepper

Pre-heat oven to 350°. Line two cookie sheets with parchment paper. Mix ingredients and seasonings in a separate bowl then pour seasonings into the pork sausage mix and mix well. I used my hands :). Make one inch balls and place in cookie sheets. About a finger width apart is fine. You should fill both cookie sheets no problem. Bake for about 15 mins or until cooked all the way. Check after 10 minutes. Originally set timer for 25 mins, but smelt something burning lol. Bottoms were a little crisp :].

Once cooked place in dining plate.

Roasted greenbeans:
A couple handfuls of fresh green beans

Place rinsed and trimmed green beans on same cookie sheet (after you have removed the parchment paper). Bake at same temperature for about 15 minutes. Flip green beans halfway through. Cooked when skin is getting wrinkly and crisp. Garnish your meatball plate with them and put extra in its own dish.

Coconut Flour Pie Crust by Nutty Kitchen

Yummmmm!

    So my husband has had trouble digesting nuts for a couple months so I started researching new pie crust for thanksgiving since the ones I made last year had nut crusts. Came across this recipe by Nutty Kitchen. Very simple and easy! Turned out great and have no complaints! Was able to eat a healthier dessert for thanksgiving with success! I filled it with homemade pumpkin pie filling. Here is the link to her website and recipe. 

Easy Cheesy Rolls By Mrs. PaleO Eats

    Ok so when I came across Mrs. PaleO Eats website I was thrilled!!!!!!! I had to try her recipe! All of them sound amazing and pretty simple in directions and ingredients. I recently came across tapioca flour a couple months ago and am pleased to say it makes a very good alternative to flour or corn starch as a thickener. I found out about it when I started making sweet potato fries! Any who this recipe is AMAZING! I cannot express how amazing these rolls taste warm! I also didn't hand mix it like the recipe called for. I just threw it together in my food processor so it was well blended and even more bread like.
