Apple, Banana, and Blueberry Paleo Morning Muffins

 Found this recipe on Fastpaleo.com. Had ripe bananas and wanted to make something new! Here is the direct link. http://fastpaleo.com/apple-banana-and-blueberry-paleo-morning-muffins/ . I thought the blueberries really made the muffin...tastes best warm! 

"Ingredients
2 1/4 cups blanched almond flour * I used almond meal*
 4 organic eggs
 1 organic apple peeled and finely chopped
 1 soft and ripe banana
 1/3 cup blueberries
 1/4 cup coconut oil, *MELTED*
 1/3 cup water
 1/2 teaspoon aluminum free baking soda
 1 teaspoon of vanilla extract
 1 heaping tablespoon cinnamon

Cooking Steps

From Three Cavemen and A Lady!

1.Preheat oven to 350 degrees.
2.Mash the banana with a fork at the bottom of a large mixing bowl.
3.Peel and finely chop the apple and add to the bowl.
4.Add all other ingredients and mix by hand.
5.Once incorporated the batter should become the consistency of cake batter.
6.Use some extra coconut oil and generously grease each hole in your muffin tin.
7.Fill the tins about 3/4 of the way full.
8.Bake for 15-17 minutes or until you can insert a toothpick into the middle of a muffin and it comes out clean.
9.Let cool a little and then pop them out of the muffin tin."

 

*Had an issue with my muffins sticking to the sheet so I decided to make the rest of the batch into cookies lol just put down wax paper & put about a tablespoon and 1/2. I also put extra blueberries on top :). *


Holiday Spice Nuts

Delicious!
I found this recipe on fastpaleo.com which is amazing! Tons of recipes, a community of sharing paleo & primal goodness. :) Here is the direct link http://fastpaleo.com/holday-spiced-nuts/ . Made this for my family as a treat for Chirstmas and it was a great idea since they loved it!

"Ingredients:


6 cups Nuts (Almonds, Walnuts, Pecans)
 1 Whole Egg plus 1 Egg White
 2/3 cup Honey
 2 Tablespoons Cinnamon
 1 teaspoon each: Allspice, Ground Cloves, Salt
 
Cooking Steps



Beat the spices and honey into the eggs. Fold in the nuts and mix until the nuts are all well coated.

Spray a cookie sheet (with a lip) with coconut oil.

Spread the nuts evenly on the pan. Drizzle all extra spice mixture over the nuts.

Cook for 1 hour and 20 minute at 250F. Toss nuts every 20 minutes.

*I just did 1 hour because the honey started to burn on me*

Let cool completely, then break apart into small clusters."

Ham Sliders

 Filling

Rolled & ready to eat!

Ingredients:

Pre-cut slices of ham
Cream cheese
Chives, chopped

Warm & crisp ham on skillet. Once done put on plate to cool. Add some cream cheese, however much you like. Then sprinkle on chives! Roll & serve. DONE! 

Mini Ham Sandwich



Ingredients:
Slices of pre-cooked ham
Your favorite Cheese (I used mozzarella)
lettuce

Crisp ham on skillet, once you have crisped one side flip and put your cheese. When melted set on a plate & put some lettuce. Fold & enjoy! Simple and easy meal/snack when you want something fast and satisfying. Enjoy!

Son of Grok Waffles


Shelley, my mother-in-law, came across this recipe and I needed to share! Tasty & takes like a regular waffle not some dry wanna be :). I got it off of the Son of Grok Website http://www.sonofgrok.com/2009/09/old-old-world-waffles/



Ingredients:
- 8oz Organic Cream Cheese
- 1 cup almond flour
- 1 half cup shredded coconut.
- 4 eggs
- 1-2 teaspoons vanilla
- dash of cinnamon
Waffle Syrup:
- Fruit! Any you like but I have found that frozen strawberries that are put in the microwave and then chopped and mashed makes a great natural syrup!
Directions:
1. Pulse half cup of shredded coconut in a food processor or blender until you have a kind of coconut flour. (some people may remember this from some of my other recipes) This makes a great coconut flour that is full fat and less dry than pre-made almond flour which is usually de-fatted.
2. In a mixer or mixing bowl, combine all ingredients and mix well to create a batter.
3. Cook your batter on the waffle iron. If you dont have a waffle iron, you could probably make them pancake style in a pan on the stove.
4. Enjoy them how you like them! We did some organic butter and the heated frozen strawberry natural syrup.
