Paleo Comfort Foods Basic Bread

    Paleo Comfort foods is a good book for interesting and delightful paleo recipes. Here is a link to their blog: http://paleocomfortfoods.com/blog/ My husband give it to me for Christmas and was a great present! Their recipe for basic bread is great!
     I made a loaf. It is dense like cornbread, not fluffy. Its made from almond flour mostly. I used blanched almonds which was a labor of love for me :). It called for 3 1/2 cups of Almond flour so I was in the kitchen for 40mins taking of the skins of the almonds to make my own flour. I myself prefer blanched almond flour.
     I won't share the recipe since it isn't posted on the internet and is only found in their cookbook.Below is what their cover looks like and a link on where to by it if not found in your local bookstore.




Sweet Potato Chips

 

    Just joined Pinterest recently and came across a new favorite website. Paleoonabudget.com ! There I found a recipe of sweet potato chips. I think they used yams.They also have a recipe for mayo too.
     I noticed for my chips to be crunchy they have to be almost dark brown. Picture above is them still a little chewy.Still a work in progress for me, my oven is unpredictable!

"Ingredients:
- Sweet Potato {If you buy more than one make sure that they’re all roughly the same width it makes for even cooking}
- Salt, Pepper
-Olive Oil
-Seasoning { I use whatever mix I have floating around Italian Seasoning or Pizza Seasoning are my favorite}
Directions:
•I use a mandolin to cut my potatoes into thin disks, if you want do it by hand feel free, I just can’t get them that thin on my own {Just be careful! Both are sharp and you can cut yourself}.
•On my baking sheet, I place however many chips can fit in a single layer, drizzle with Olive Oil.
•Then sprinkle salt, pepper, seasoning. Get your hands in there and mix it all up so all sides are coated with oil and seasoning.
•Put them back in a single layer.
•Bake at 350 for about 9-12 minutes (my oven cooks at the speed of light for some odd reason, so I set my timer for 9 minutes, and then keep checking them)
•When they’re done, transfer to a plate, add extra salt if you want and do the next batch (if needed) I end up doing about 4 batches for 2 sweet potatoes
If you let them cool down, they get crunchy like a real chip and then they’re addictive and you can’t stop eating them."

Paleo Parents Paleo Grain-free Granola AKA Awesome Cereal

    Down below I pasted it as well. My husband cant get enough. I see him sneaking bites here and there through out the day! I used raisins instead of cranberries...will try cranberries soon! Tastes great with almond milk. YUM.



"Grain-Free Granola dairy-free, wheat-free, peanut-free, soy-free, fish-free, shellfish-free, egg-free (contains tree nuts)
Ingredients
  • 1 1/2 C sliced almonds
  • 1 1/2 C unsweetened coconut flakes
  • 1 C walnuts, finely chopped or pureed
  • 1 C macadamia nuts, finely chopped or pureed
  • 1 C dried cranberries
  • 1/2 C fresh dates, diced
  • 1/2 C coconut oil, melted
  • 1/3 C honey
  • 2 tsp cinnamon
Instructions & How Kids Can Help
  1. ♥ Combine almonds, coconut flakes, nuts and fruit in a bowl
  2. ♥ Whisk together oil, honey and cinnamon
  3. ♥ Pour oil-honey mixture over nuts and fruit and mix, let little hands mix well
  4. ♥ Spread onto a single layer on lightly oiled baking sheet
  5. Bake for one hour at 275 degrees, stirring every 15 minutes to prevent burning
Note: All steps which include the heart symbol ( ♥) are steps your children can do with you!
A small note: You can interchange ingredients as you’d like, but keep in mind the more sugar you add, the more likely it is that it will burn! ALWAYS check in on this recipe and pull it out early if it starts to get too brown!
This recipe makes a hefty batch that you can store in your pantry for quite a while. It is wonderful to eat loose by the handful or as part of a trail mix; but our boys love it by the bowl full with a handful of berries. Once you’ve made a batch, feel free to play with the nuts to include your own favorites – just make sure to always keep sliced almonds and coconut flakes as the base. Our kids particularly love the cranberry and dates combination but we’ve used raisin and chopped apricots with good luck too."

*I just did mine for 45 mins because it was starting to burn on me. Depends on your oven. So just watch carefully!*
