Amazing recipe! I love it. Finally decided to make it at home. My mother in law makes them whenever we come over.
Here is the recipe:
These are so good and easy to make! Just making them into balls takes up most of the time, but I was jamming out with some music so I didn't mind :)
Ingredients:
2lbs pork sausage
Small to medium red bell pepper, minced
Handful or two or mushrooms, minced
2 eggs, whisked
Seasonings:
2 tsp garlic powder
2 tsp Italian seasoning
1 1/2 tsp of sea salt
(I put 2 tsp originally, but found it a tad salty)
1 1/2 tsp of pepper
Pre-heat oven to 350°. Line two cookie sheets with parchment paper. Mix ingredients and seasonings in a separate bowl then pour seasonings into the pork sausage mix and mix well. I used my hands :). Make one inch balls and place in cookie sheets. About a finger width apart is fine. You should fill both cookie sheets no problem. Bake for about 15 mins or until cooked all the way. Check after 10 minutes. Originally set timer for 25 mins, but smelt something burning lol. Bottoms were a little crisp :].
Once cooked place in dining plate.
Roasted greenbeans:
A couple handfuls of fresh green beans
Place rinsed and trimmed green beans on same cookie sheet (after you have removed the parchment paper). Bake at same temperature for about 15 minutes. Flip green beans halfway through. Cooked when skin is getting wrinkly and crisp. Garnish your meatball plate with them and put extra in its own dish.
Don't know what to do with all the eggplant you got from your CSA or garden? Make eggplant fries! I used a little tapioca flour in the mix, about 1/6 of a cup and used coconut oil instead of olive oil. Great recipe!

Melt in your mouth goodness! :) Ididn't use the called for cheese and would flip over the fries at ten minutes rather then fifteen. I also used a French fry cutter on the smaller grate. Recipe below!

Joyous day in the Grandjean home! After years of not having a paleo friendly tortilla I finally found an amazing recipe! I didn't have lard so I just used chilled butter. Turned out great! Doubled the recipe and baked in the oven for 5min at 400 degrees. Will try the skillet next because the edges were too crispy. Here is the link to the recipe. Made enchiladas with them. So flexible and easy to work with once cooled.

So me and my husband started getting our first bag of CSA groceries and they were full of greens! :) We got a full share so it's quite a bit. I decided to make a frittata to use up some. It tasted really good, but a tad dry. I think I over cooked it by just a bit so I lowered the cooking time in this recipe! I was inspired my Nom Nom Paleo's Easy Bake Frittata recipe.
Ingredients:
1 tablespoon coconut oil or fat of choice
3 pieces of bacon, cooked & diced
2 Adelle sausages,cooked and diced ( chicken & apple is my fav)
2 cups of diced greens (chard, spinach, kale)
2 green onions, minced
6 large pastured eggs
3 tablespoons coconut milk
1 teaspoon kosher salt
Freshly-ground black pepper
First, preheat the oven to 350°F and heat the coconut oil in an 8-inch cast iron skillet over medium heat.Saute greens & green onions. In a small bowl whisk eggs, milk of choice, and salt and pepper. Once greens are cooked add protein and mix together in skillet. Pour over egg mixture and cook for 3 mins. Put in oven for 8 to 10 mins, then broil for a couple mins until frittata fluffs up. Serve & enjoy!
