Simple and easy!
1 head of broccoli, chopped
2 strips of bacon
2 chicken drumsticks, cooked & shredded
2 green onions, diced
sprinkle of shredded cheese
splash of you favorite salsa/pepper sauce
Cook the bacon first so you can use the lard for sauteing the broccoli. Once bacon is done set aside and dice into small pieces. Throw in cut up broccoli, green onions, and shredded chicken. Cook until broccoli is to your liking. Serve on plate then add shredded cheese and bacon.
Makes two servings.

Paleo Graham Crackers

Me and my sister turned them into "Gingerbread" cookies with heavy whipping cream and coca for decoration. Wasn't a very sweet cookie so I think I will use them to compliment some fruit and whipped topping.

Paleo Country Fried Steak with Primal Gravy Sauce
Eureka! We went to Roth's Grocery Store and were looking at what meat to buy and CJ picked some cubed steaks. I didn't know what to do with them so I looked up some recipes. Came across allrecipes.com and found a recipe for country fried steak http://allrecipes.com/recipe/country-fried-steak-and-milk-gravy/ .I modified it to our liking and came up with something delicious and healthy!
2 cube steaks
1 egg, lightly beaten
1/4 cup of coconut flour
1 cup of almond flour
3 tablespoons of half&half (or milk should do it)
1/2 cup of beef broth
a couple of dashes of garlic,onion & Ms. Dash garlic & herb blend
salt & pepper to taste
2 green onions, chopped
Olive oil/Coconut oil or lard
Season cube steaks with spices and set aside. In a shallow dish combine flours and spices. In a seperate dish whisk egg. Dip steaks in flour then in egg batter and back in flour blend. Let rest for 5 minutes. While they are resting turn on skillet to medium and put in a generous amount of oil. Fry steaks for 4 to 5 minutes on each side until golden brown. Drain on paper towels.
Drain out excess oil in container and put two tablespoons of oil/drippings back in skillet. saute green onions & then pour in left over flour and brown. Once flour blend is browned pour in beef broth and whisk in milk for about 3 or 4 min on medium heat until bubbling and thickened. Add extra spices if needed. My husband said it was more of a sauce then a gravy. Next time I will put more beef broth to thin it out to his liking :).
Any who once its done enjoy!!! I put a clear lid over my steaks while they were cooking to help cook them through. I dont like pink in the middle. The flour blend was great, just enough coconut flour to not make the almond flour burn quickly.

Sausages!
We found this brand at Safeway! My favorite is Italian Sausage & Spinach and Feta. Not organic but a better quality meat. No nitrates and most of the choices have no sugar added. These ones don't but we still check the ingredients every time just to be sure.
Aidells Chicken & Apple is so good! I love the breakfast links which are thinner and shorter. They come in a 6 pack. No added sugar or nitrates :)
Salsa!
Tired of looking at ingredient labels trying to find a salsa without the added sugar? look no further! lol We discovered PACE! When we are on the run grocery shopping and don't want to bother looking at ingredients we just grab this guy.
Banana Breakfast

1/2 cup applesauce
1 med. banana
1 T almond butter
sprinkle of cinnamon
A good quick breakfast. I usually ate this when I needed something and didn't really feel like eating meat lol CJ came up with the applesauce and almond butter...I just added a banana and tada!

Paleo Almond Crackers
I found this recipe when I was dying for something to eat my tuna fish with or have some sort of cracker when we first started switching the primal. Here is the blog I found it at :) http://cavemanfood.blogspot.com/2009/04/grain-free-almond-crackers.html
1 cup almond flour
1 egg white
1 pinch salt
*favorite spice of your choice*
Topping:
Sea Salt
Melted Butter
* I usually use Ms. Dash Garlic & Herb with garlic & onion powder. Don't be afraid to put a good amount of spices...you can barley taste them because the almond overtakes it. I usually do 4 dashes of each*
"Preheat the oven to 325 degrees.
In a bowl, mix together the almond flour, egg white, and salt until it forms a paste.
Line a cookie sheet with parchment paper. Make sure you use parchment paper, because if you don't you'll end up chipping your crackers out of the pan. Place the dough in the middle and top with another piece of parchment paper. Using a rolling pin (or any other cylindrical instrument), roll out the dough as thin as you can get it. Try to make it take up the whole cookie sheet if you can. Super thin. I mean it!
Peel off the top layer of paper and score the dough with a knife into whatever size crackers you want. Bake in the 325 oven for 10 minutes and then check on the crackers. You are looking for them to color ever so slightly. A little color means crispy, but a lot of color means burned nut taste, which is no good. If the edges have started to color nicely, remove them to a plate and put the remaining crackers back in the oven. Keep doing this, checking every 5 minutes and removing the golden crackers, until finally they are all baked to perfection."
Once they are done and right out of the oven, I usually spread melted butter on top then sprinkle sea salt. Really makes a difference!
Cool completely and store in an airtight container.

Honey Almond Crackers
just add:
1 Tbs of honey
1 Tbs of butter
cinnamon*
truvia*
I changed the temperature to 300 since they burn quicker with the honey and butter. I kept them in for about 8 min. Then when they came out of the oven I coated them with cinnamon & truvia*.

Cheesy Garlic-Herb Drop Biscuits
Two biscuits with a chicken sausage in the middle :)
I came across this recipe recently and fell in love! Here is the website, it also has a ton of recipes. http://www.cookinggodsway.com/ I was so excited to try it out! Happy it turned out to be pretty good! They taste great with a bit of butter on top or you could easily make a sandwhich out of it. I first tried them as biscuits and loved them so much the secound time I flatted them out and made thin bread! I wanted to try that out. I am more into crispy then soft. Anywho they are amazing! Enjoy!
4 eggs
1/2 tsp salt
1/8 tsp onion powder
1/4 tsp garlic powder
1/4 tsp italian seasoning, or your favorite herb
1/4 cup coconut oil, melted
1/3 cup coconut flour, sifted
1/2 tsp baking powder
1/2 cup cheddar cheese, shredded
Preheat oven to 400°F. Grease a cookie sheet, set aside.
In a medium bowl blend together eggs, salt, onion powder, garlic powder, and italian seasoning with a wire whisk until eggs are beaten and seasonings are mixed through. Slowly whisk in oil a little at a time until combined. Mix in, with a spoon, flour and baking powder until there are no lumps; fold in the shredded cheese.
Drop by small mounds onto greased baking sheet (the biscuits will spread slightly and rise, so do not make the mounds too large or you will end up with giant biscuits). Gently form the mounds into rounded shape with spatula. Do not flatten them, just round out the edges to give them a nice shape. Bake for 10-12 minutes in oven until done, edges should be light golden brown.
Makes 8 to 10 average-sized biscuits.
*I added cheese on the top of the biscuit and toasted it in the oven for extra pzazz.*
Cauliflower Rice
Love it! Great addition for most any meal. I love to throw it in when my hamburger meat is all cooked. I let it saute for 5 to 10 mins in the meats juices and bam! Yummy! Quick and easy. All you have to do is grate raw cauliflower with a cheese grater (the smaller teeth).
Pumpkin Cheesecake & Everyday Paleo Pumpkin Pie
With Thanksgiving coming up I decided to try out some desserts to bring that would be primal friendly and something my wonderful husband could eat.
I first tried Primal Cheesecake. I got the recipe from wellnessmama.com... Amazing website.

Just to let you know I didn't really care for the crust! :(. The crust one the Everyday Paleo Pumpkin Pie by everydaypaleo.com is much better and the texture is more like a crumbly buttery goodness. :)

Crust (I just used almonds)
1/2 cup hazelnuts
1 cup pecans
4 tablespoons melted organic grass fed butter
pinch of sea salt
Preheat oven to 350. Place the nuts in a food processor and process until the nuts are a flour like or almond meal like consistency. Pour into a small mixing bowl, add the butter and salt and mix into a thick dough. Using your hands, spread evenly into a pie pan and back for 10 minutes.
Filling
1 – 14oz can of organic pumpkin puree (nothing added, just pumpkin)
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon fresh grated ginger
2 eggs
1/2 cup raw organic honey
1/2 cup coconut milk
While the crust is in the oven, whisk all of the pie filling ingredients together. Pour into the curst that has been baked for 10 minutes, return to the oven and bake for and additional 45 minutes.

Almond Crusted Chicken Strips
(Sided with sweet potato fries and Dijon mustard.)
This recipe I came up with on my own :). Simple yet satisfying.
About 4 pre-cooked chicken breasts, cut into strips
1 1/2 to 2 cups of almond flour
2 or 3 eggs
salt & pepper to taste
a couple tsp of your favorite spices (italian seasoning...)
a couple of tbsp of olive oil or coconut oil
Combine almond flour and spices in small bowl. Whisk eggs together in seperate bowl. Dip pre-cooked chicken in almond flour then in egg wash and back again in almond flour. Put in tray or dish. Continue until all chicken strips are coated.
Put a couple of tbsp of oil in skillet or pan. When oil is hot put in a couple of strips at a time. *NOTE* almond flour burns quick so you have to keep a close eye on your yummy creation.
That is another reason why I cooked the chicken before hand. Enjoy with your homemade ketchup or dijon mustard is good too.

So simple! So delicious! I just made this for dessert tonight. I came across this recipe...if you can call it that, earlier this year. All you have to do is peel and chop up ripe bananas. I usually do two or three. Put them on a tray or what have you and throw them in the freezer!
Once they are frozen you just put the banana pieces in a blender or food processor.Blend until smooth . Or just do it for a little bit and make banana dip in dots he he.
