(Sided with sweet potato fries and Dijon mustard.)
This recipe I came up with on my own :). Simple yet satisfying.
About 4 pre-cooked chicken breasts, cut into strips
1 1/2 to 2 cups of almond flour
2 or 3 eggs
salt & pepper to taste
a couple tsp of your favorite spices (italian seasoning...)
a couple of tbsp of olive oil or coconut oil
Combine almond flour and spices in small bowl. Whisk eggs together in seperate bowl. Dip pre-cooked chicken in almond flour then in egg wash and back again in almond flour. Put in tray or dish. Continue until all chicken strips are coated.
Put a couple of tbsp of oil in skillet or pan. When oil is hot put in a couple of strips at a time. *NOTE* almond flour burns quick so you have to keep a close eye on your yummy creation.
That is another reason why I cooked the chicken before hand. Enjoy with your homemade ketchup or dijon mustard is good too.
