Continuing with the seafood theme, here is a recipe for Red Snapper. Red Snapper is great for people that don't really like the "fishy" taste that is associated with fish normally. Red Snapper is a white meat and more milder in taste. Behind Salmon, Red Snapper has the best protein of any fish out there. Here is a recipe I found online. It is pretty simple and I thought it was pretty tasty. Esther even tried it and like it! This feeds 2-3
Ingredients
-1 lb red snapper fillets
-juice of 1 lime
-juice of 1/2 lemon
-1 tsp chili powder
-1 plum tomato coarsely chopped
-4 green onions, sliced in ½ inch sections
-1 small Anaheim pepper, chopped
-1/2 red bell pepper, chopped
-handful fresh cilantro, chopped
Instructions:
Place red snapper in a shallow baking dish.
Combine lime juice, lemon juice and chili powder in small bowl and sprinkle over snapper.
Marinate 10 minutes, turning a few times.
Meanwhile, preheat oven to 350℉.
Sprinkle chopped onions, tomato and peppers over snapper.
Cover and bake for 20-30 minutes or just until snapper flakes in center.
Let stand, covered, 4 minutes before serving.
Garnish with fresh cilantro.

Note: I actually didn't cover my fish when I cooked this and didn't realize I needed to add the onions, tomatoes and peppers on the fish until it was about 5 minutes left for baking. It was still great.

Bay shrimp and egg scramble
CJ again. Here is another recipe to incorporate bay shrimp. It makes the perfect breakfast when pair with eggs.
Ingredients:
-1/4 cup of bay shrimp
-2 eggs
-half a head of broccoli
-about a 1/3 of a leek (yes a leek again!)
-3 or 4 cherry tomatoes
-1 tsp of both garlic and onion powder
-about 1/2 tsp of both paprika and chili powder
-dash of salt and pepper to taste (try to be as light as you can on the salt)
This fed me for one morning. Its kind of a lot of food but I was hungry that morning and this completely satisfied me especially with a side of blueberries and blackberries. Again saute the shrimp for about 2 and a half minutes first. Saute in olive oil or coconut oil (you don't need much just enough to coat the surface). After that crack the eggs on top of the shrimp and mix in the vegetables and the spices. Stir constantly. Don't allow it to sit too long because it will change the texture of the eggs. Once the eggs are cooked all the way through... enjoy! Great Paleo breakfast!!

Bay Shrimp Scampi
Hello, this is CJ making a guest post. Esther says that I have some great cooking ideas and I think I should suggest some ideas for people trying to make a healthy transition. Seafood is probably the best kind of food to eat and I'm not a big fan of it myself, but it is just too healthy to pass up. This following recipes I find very good and tasty and it takes away some of the "fishy" kind of taste. Bay Shrimp is the best of all the seafood in terms of protein and I have a couple of good recipes. This is the Bay Shrimp Scampi.
Ingredients:
-1/2 - 3/4 Cup of Bay Shrimp
-1/2 of a Leek (a Leek?!)
-Head of Broccoli
-1 tsp of Onion and Garlic Powder each
-Dash of Salt and Pepper to taste
This feeds about 2 people. Chop the Broccoli not too finely but just enough. Cut the Leek as you would cut a green onion. If you want more Leek, cut more. Saute the shrimp first for about 2 minutes cooked with a little bit of olive oil or coconut oil (doesn't matter if its regular or extra virgin). Then add the vegetables and the spices. Cook for about another 3 to 4 minutes. Very simple and very satisfying. Surprisingly not very fishy tasting either.

The Urban Poser Cauli-Fried Rice
Haven't made cauliflower rice in quite some time so I thought I would give it a go and find a great recipe. Well The Urban Posers recipe is divine! I edited mine a bit since I didn't have some ingredients, but all in all I followed her instructions carefully. Especially how to cook the cauliflower rice and adding the egg to the mix to get the "rice" fluffy. I must say it worked! Nice dish if you are missing rice. Great recipe and very versatile! Everyday Paleo Pulled Pork Recipe
OK THIS IS AMAZING!!!!!!!! Can't believe I haven't been using my crockpot! We are currently on the 30 day Paleo Challenge for the month of September and I wanted to expand my horizons as far a using the crockpot. So I had my husband go to New Seasons on his way to visit his parents and ask the butcher for the best cut for pulled pork. He gave us over 3lbs of pork shoulder. Everyday Paleo's recipe is amazzzing and tasty and the only differences are I used one red & one sweet onion & the amount of pork & cut.So easy! Prepared it before bedtime and when we awoke....
