Bay shrimp and egg scramble

CJ again. Here is another recipe to incorporate bay shrimp. It makes the perfect breakfast when pair with eggs.


Ingredients:

-1/4 cup of bay shrimp
-2 eggs
-half a head of broccoli
-about a 1/3 of a leek (yes a leek again!)
-3 or 4 cherry tomatoes
-1 tsp of both garlic and onion powder
-about 1/2 tsp of both paprika and chili powder
-dash of salt and pepper to taste (try to be as light as you can on the salt)

This fed me for one morning. Its kind of a lot of food but I was hungry that morning and this completely satisfied me especially with a side of blueberries and blackberries. Again saute the shrimp for about 2 and a half minutes first. Saute in olive oil or coconut oil (you don't need much just enough to coat the surface). After that crack the eggs on top of the shrimp and mix in the vegetables and the spices. Stir constantly. Don't allow it to sit too long because it will change the texture of the eggs. Once the eggs are cooked all the way through... enjoy! Great Paleo breakfast!!
